The food comes first. Bibimbap is rice, namul, a fried egg, and a chile paste you stir in at the table. The only change in the premiere of Bon Appétit, Your Majesty is the fat. Sesame oil steps aside. Brown butter, cooked to hazelnut, carries the gochujang. That is a home dish. You do not need a palace kitchen.

The bowl: day-old short-grain rice, hot; gochujang, 1 to 2 tablespoons; unsalted butter, 2 tablespoons, browned until it smells like hazelnut; spinach, bean sprouts, carrot, zucchini, or whatever namul you have; one egg; optional slices of beef or mushrooms. Brown the butter first. Stir it into the gochujang off the heat so the paste does not scorch. Spoon that over the rice and mix at the table the way the show does: one motion, red through white.

Gochujang is fermented chile. The butter is a French trick on a Korean paste.
